Vegan Biscuits In Three Colours

Ingredients
For GREEN biscuits
- 250g Blanched baby spinach
- 1 Banana
- Seeds from 1 vanilla pod
- 100ml Coconut oil
- 1tsp Baking soda
- 1Tbsp Lemon juice
- Flour
- 2-4Tbsp Agave syrup or sugar
- 1pinch Salt
For RED biscuits:
- 3medium sized Beetroot
- 1 Banana
- 1Tbsp grated Ginger
- 100ml Coconut oil
- 1tsp Baking soda
- 1Tbsp Lemon juice
- Flour
- 2-4Tbsp Agave syrup or sugar
- 1pinch Salt
For ORANGE biscuits:
- 3medium sized Carrots
- 1 Banana
- 2tsp Cinamon
- 100ml Coconut oil
- 1tsp Baking soda
- 1Tbsp Lemon juice
- Flour
- 2-4Tbsp Agave syrup or sugar
- 1pinch Salt
Instructions
- Blend the banana together with the vegetable until smooth.
- Mix with melted coconut oil.
- Add the agave syrup, salt and other spices.
- Mix the soda with the lemon juice, then add to the mixture.
- Stir and add gradually flour until you reach a soft and smooth dough.
- Put the dough into a container with lid and refrigerate for at least 1 hour.
- Transfer the dough to a lightly floured surface. Pat the dough to a 1,5cm thickness.
- Cut the dough into rounds and arrange them on a baking tray.
- Bake at 175°C for 15-25 min, until light golden.
Notes
You can add also seeds, chopped nuts or chocolate chips according to your taste. This biscuit recipe works also great as a base for cakes.
