Vegan Forest Mushroom Smaženice

Full with fiber, protein, selenium and potassium among many other Vitamins and nutrients. But most importantly – it makes great fun to go out into the forest and gather them for yourself :)

Ingredients

  • 500g Forest mushrooms
  • 150g Yellow pea flour
  • 225ml Unsweetened soy milk
  • 40ml Vegetable oil
  • 1 Red onion
  • 1 White onion
  • Parsley and Dill
  • 1Tsp Pink Himalayan salt
  • 1Tsp Black Himalayan salt
  • 1Tsp Pepper

Preparation

Wash and drain the mushrooms thoroughly.

Instructions

  1. Cut the mushrooms into large slices.
  2. Dice the onions.
  3. Mix the yellow pea flour with the black salt and the soy milk.
  4. Stir the mixture well until smooth.
  5. Saute the onions on a hot pan.
  6. Add the mushrooms, salt and pepper and saute for another minute.
  7. Lower the heat and put a lit on the pan. Let it simmer for about 20 minutes.
  8. Add the flour mixture slowly whilst stirring.
  9. Stir and cook until it reaches an omelet kind of consistency.
  10. Sprinkle with parsley and dill – ready to serve.

Notes

You can also substitute the yellow pea flour for red lentil flour. Also try adding some caraway.
