Vegan Sweet Potato Bean Burger

Delicious, healthy and nutritious. A spicy burger with Jamaican kick :) . Based on a recipe from Tim Shieff – simply a great Vegan burger!

Ingredients

To mix:

  • 3 small sweet potatoes or 1 big (without skin) – baked
  • 1 tin canned mixed beans (without fluid)
  • ½ tbsp ground cumin
  • a dash of salt and black pepper
  • 2 spring onions (chopped)
  • 1 fresh cayenne pepper (without seeds)
  • 1 small handful of fresh coriander
  • 1 tbsp of plain flour or gluten free
  • 1 bio lime (peel)

To fry:

  • 2 tbsp vegetable Oil
  • ¾ cup flour

For the wrap:

  • burger buns and/or
  • tortilla wrap and/or
  • lettuce leaves
  • 1 small handful of fresh coriander
  • 1 yellow bell pepper, sliced, to garnish
  • 1 tomatoes, sliced, to garnish
  • 1 red onion, sliced, to garnish
  • 1 cucumber, sliced, to garnish
  • 4 tbsp ketchup or your favorite burger sauces

Instructions

  1. Bake the sweet potatoes at 200°C for about 30 – 40 min.
  2. Put all ingredients into the food processor or mixer and blend it.
  3. Divide the mixture into 4 equal portions and form patties out of it.
  4. Cover all patties thoroughly with flour.
  5. Heat up the vegetable oil in a frying pan to medium heat. Add the patties and fry them gently for 6 – 7 min on each side until they are golden brown.
  6. Put the burger buns – cut side down – into the same pan and toast for 1 – 2 min over medium heat.
  7. Put some salad leaves and tomato slices on the bottom bun. Then place a patty on the top and finish the burger of with ketchup or your favorite sauces, slices of tomato, onion, cucumber and coriander. Place the other bun on top and serve immediately.

Notes

Instead of burger buns you can try out tortillas or our favorite: lettuce leaves – they make the burger extra crunchy!
